Answer: Dalhart, the one-time home of the famed XIT Ranch. The annual event started in the 1930s when a group of former ranch hands got together for a reunion. During the first weekend in August, volunteers cook 10,000 pounds of beef in two 75-foot underground pits doused with 1,000 gallons of fuel. According to Texas Monthly BBQ editor Daniel Vaughn, “There’s no payment, no tip jar, you just show up. You just drop in on Dalhart at the right time.”
